Ingredients:
4 ounces soba noodles
2 tablespoons creamy peanut butter
1 tablespoon sriracha or hot sauce of choice
1 tablespoon rice vinegar
1 tablespoon low sodium soy sauce or tamari
1⁄4 cup sesame or olive oil
1 bell pepper, sliced
1 cup frozen edamame, thawed
2 cups shredded carrots
4 green onions, sliced
2 tablespoons chopped peanuts
Directions:
1. Cook soba noodles according to package directions. Drain and rinse. Set aside.
2. To make the dressing, whisk peanut butter, sriracha, rice vinegar and soy sauce in a small bowl.
3. While continuing to whisk, slowly add the oil.
4. Pour 1⁄4 of the peanut dressing in a pint-sized jar, followed by 1⁄4 of the cooked soba noodles.
5. Layer the remaining ingredients on top. Sprinkle with sesame seeds and peanuts. Place the lid on top and store in the refrigerator for up to 5 days.
