Ingredients:
12 oz feta cheese
1 cup plain greek yogurt
8 oz. neufchatel cream cheese, room temperature
1⁄4 cup olive oil
Juice and zest of 1 lemon
2 teaspoons dried dill (or 2 Tablespoons fresh dill)
1⁄4 teaspoon salt
1⁄2 teaspoon red pepper flakes, or to taste
1⁄2 cup chopped cucumber
1⁄2 cup chopped tomatoes, or halved cherry tomatoes
Directions:
1. Combine feta cheese, yogurt, cream cheese, olive oil, lemon juice, lemon zest, and dill in a large bowl. Using a hand mixer, mix until fluffy. Season with salt and red pepper flakes.
2. If desired, transfer to serving bowl and top with the cucumber and tomatoes. Serve with fresh cucumber and bell pepper slices.
