Ingredients:
1/2 cup balsamic vinegar
1/2 cup olive oil
1 tablespoon Dijon mustard
1 tablespoon honey
3/4 cup toasted pecans
10 oz baby spinach
2 cups fresh strawberries, hulled and sliced
5 oz. feta cheese, crumbled
1/3 small red onion, thinly sliced
Directions:
1. Make vinaigrette – add vinegar to saucepan, bring to boil and allow to boil until reduced to half (about 3 minutes). Pour into a jar and add olive oil, Dijon mustard and honey.
2. Whisk to blend, season with salt and pepper. Thin with water for desired consistency.
3. In a large bowl combine spinach, strawberries, pecans, feta cheese and onions. Toss with enough dressing per preference.
