Ingredients:
6 whole wheat English muffins
6 eggs
1 pound ground turkey, 93% lean
1 tsp salt
1⁄2 tsp black pepper
2 1⁄2 tsp Italian seasoning
1⁄2 cup shredded cheddar cheese
Directions:
1. Toast English muffins.
2. Using a small amount of oil in a skillet, fry eggs until yolks are not runny.
3. Mix ground turkey, seasoning, salt and pepper in a bowl and form into patties slightly larger than an English muffin. Place in preheated skillet over medium high heat and cook until middle is not pink (~5 min/side).
4. To assemble sandwiches: English muffin bottom, egg, {sausage, cheese –divided evenly}, English muffin top.
5. If storing, allow sandwiches to cool completely. Wrap individually in plastic wrap and store in freezer.
6. To cook, remove from plastic wrap and re-heat.
