Ingredients:
2 medium - large tomatoes
1 8-oz fresh mozzarella ball
5 fresh basil leaves
1/2 teaspoon dried oregano
1 tablespoon extra-virgin olive oil
Salt and pepper to taste
Directions:
1. Core tomatoes, then slice in 1/4-inch slices.
2. Slice mozzarella in equally thick slices. Layer with tomatoes, alternating between the two.
3. Stack basil leaves, roll together and slice into thin ribbons. Arrange on top of tomato and mozzarella slices.
4. Drizzle olive oil on top; sprinkle oregano, salt and pepper.
5. Optional modifications: Use cherry tomatoes, sliced in half, in place of larger tomatoes and small mozzarella pearls rather than the large ball, and combine with other ingredients in a bowl.
6. Add balsamic vinegar for extra flavor.
