Total time: 15-20 minutes
Ingredients:
2 cups oats
1 ripe banana
1 1/2 cups reduced fat milk or nondairy alternative
1 egg
1 1/2 teaspoons baking powder
Oil or cooking spray to coat the pan
Optional add-ins: 1-2 teaspoons vanilla extract, honey to taste, 1-2
tablespoons nut butter, nuts to taste, berries to taste
Directions:
1. Blend the oats in a high-speed blender until an oat “flour” forms.
2. Add the banana and milk into the blender and blend until smooth.
3. Add in the egg and baking powder and pulse to combine. If including any of the optional add-ins, you may add them to the blender at this time as well.
4. Heat a pan or griddle over medium heat and add oil to prevent pancakes from sticking.
5. Place 1⁄4 cup of pancake batter onto the pan or griddle and cook until bubbles form on the surface of the pancake. Flip and continue cooking for another 1-2 minutes, until pancake is lightly browned on each side. Continue with remaining batter.
6. Serve right away with any desired pancake toppings.
